Meatless Monday: Also known as “Pete’s Favorite Day of the Week”
I decided to start attempting a meatless meal at least one time per week (for dinner! I don’t eat meat at every meal!). It’s going sort of okay so far. I can’t remember what I did the first week, which means it must not have been very good. The next week I tried out sweet potato black bean burgers (recipe here), which I thought were GOOD, but Pete didn’t like the fact that his meatless meal looked meaty. :-\
Last week, I stole a recipe from PBS (via Katie) for vegetarian stuffed shells, and they were A HIT! Elise even liked them, WIN!
This week has been a little bit off. Typically Sunday is my grocery shopping day, and Elise wasn’t cooperating with her nap schedule so we never made it to the store. Not making it to the store on Sunday seriously throws off the rest of the week, and it’s now TUESDAY, and I still haven’t done my grocery shopping. Which leads me to our meal last night.
Due to the fact that we actually had no meat in the house, accomplishing a meatless meal wasn’t going to be that difficult. I was sort of lacking, well, everything else too. I dug around through the cupboards and fridge, poked around on the ‘net, and finally settled upon this: tomato soup and grilled cheese. Epic, right?
Let me just tell you, I’ve never even considered the idea of making my own tomato soup and I gave it a whirl last night and man was it good! I sort of followed the guidelines here and came up with an awesome pot o’ soup. Hopefully I’ll be able to put in a little more effort next week, but until then, I’m going to bask in the compliment from Pete, “this might be the best meatless monday so far”
My “recipe”
Chop and then saute:
-(wrinkly) orange bell pepper
-onion
Add:
-small can tomato paste
-small can spicy tomato sauce
-regular sized can chopped tomatoes
-small can + half small can H2O
Sprinkle in:
-salt and pepper
-garlic powder
-paprika
-oregano
If you’ve got it:
-a splash of red wine
-dollop of sour cream
Puree in blender.
THAT’S IT!
Serve with grilled cheese.
